Bouillabaisse – Mayfair
Bouillabaisse, the latest restaurant from Kurt Zdesar, brings coastal cuisine with some of the freshest and most sustainable fish and seafood in the UK to London’s Mayfair.
From their experience of sun-drenched lunches in small fishing villages in Italy, to encounters with local fisherman in Greece, Spain and the UK, Kurt and his team have combined these sustainable fishing practices and brought them to London’s restaurant heartland. The menu, created by group Executive Chef Jordan Sclare, combines traditional and contemporary coastal cooking techniques whilst ensure the fish and seafood is central to each dish. The coastal emphasis continues to the wine, with selections from worldwide coastal vineyards.
The restaurant seats 80 across two floors, with an open kitchen on the ground floor and a chef’s table for 20 which leads into it. Having previously used Marquee AV, Kurt Zdesar again chose the company to provide the audio system for his latest restaurant.
Meeting the customers brief for an aesthetically compatible quality background music system that would create the right ambience, Marquee AV designed the system using Apart loudspeakers and electronics. This not only provided the quality required, but merged well with the crisp, whitewashed-wood interior, designed by Jordan Littler.
